- Preheat the oven to 375°F. Grease a 9x13-inch baking dish with butter or nonstick spray.
- In a large skillet over medium heat, melt the butter. Add the red bell pepper and green onions; sauté for 3–4 minutes until softened.
- Stir in the hash browns and cook for another 5 minutes, stirring occasionally, until they begin to lightly brown. Spread evenly in the prepared baking dish.
- Scatter the diced ham evenly over the hash browns, then sprinkle the shredded cheddar cheese on top.
- In a medium bowl, whisk together the eggs, milk, salt, pepper, and smoked paprika until well combined.
- Pour the egg mixture evenly over everything in the baking dish. Use a spatula to gently press down so the egg soaks in.
- Bake uncovered for 35–40 minutes, or until the eggs are set and the top is golden brown.
- Let it rest for 5 minutes before slicing and serving warm.
