  • 6 large eggs
  • 1/2 cup whole milk
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 1 cup shredded sharp cheddar cheese
  • 1 cup cooked ham, diced
  • 1/2 cup red bell pepper, finely chopped
  • 1/4 cup green onions, thinly sliced
  • 2 tbsp unsalted butter
  • 4 cups frozen hash browns, thawed
  • 1/4 tsp smoked paprika

Method
 

  1. Preheat the oven to 375°F. Grease a 9x13-inch baking dish with butter or nonstick spray.
  2. In a large skillet over medium heat, melt the butter. Add the red bell pepper and green onions; sauté for 3–4 minutes until softened.
  3. Stir in the hash browns and cook for another 5 minutes, stirring occasionally, until they begin to lightly brown. Spread evenly in the prepared baking dish.
  4. Scatter the diced ham evenly over the hash browns, then sprinkle the shredded cheddar cheese on top.
  5. In a medium bowl, whisk together the eggs, milk, salt, pepper, and smoked paprika until well combined.
  6. Pour the egg mixture evenly over everything in the baking dish. Use a spatula to gently press down so the egg soaks in.
  7. Bake uncovered for 35–40 minutes, or until the eggs are set and the top is golden brown.
  8. Let it rest for 5 minutes before slicing and serving warm.
