Ingredients
  

  • 1 large ruby red grapefruit, peeled and segmented
  • 1/2 cup unsweetened coconut water, chilled
  • 1/2 cup frozen pineapple chunks
  • 1/2 cup baby spinach, packed
  • 1/2 small banana, sliced and frozen
  • 1 tbsp fresh lemon juice
  • 1 tsp grated fresh ginger
  • 1/2 tsp raw honey (optional)
  • 4–5 ice cubes

Equipment

  • blender
  • knife to peel and segment grapefruit
  • citrus juicer for lemon juice
  • measuring cups
  • tall glass for serving

Method
 

  1. Add the grapefruit segments to a blender, making sure to remove any seeds and excess membrane for a smoother texture.
  2. Add the coconut water, frozen pineapple, baby spinach, frozen banana, lemon juice, ginger, and honey (if using) to the blender.
  3. Toss in the ice cubes and blend on high speed for 1–2 minutes, or until completely smooth.
  4. Pause to scrape down the sides of the blender as needed to ensure everything is well incorporated.
  5. Taste and adjust sweetness by adding a little more honey, if desired.
  6. Pour into a tall glass and enjoy immediately while cold and refreshing.

Notes

For a sweeter blend, use ripe grapefruit and add honey only if needed. Coconut water boosts hydration and electrolytes, but almond milk or water works too. Add protein powder to make it a meal.
